I don’t know about you, but I’ve never felt more ready for the warm weather to finally sneak in. And when that weather finally does arrive, I can guarantee that I’ll be cooling down with some refreshing homemade popsicles. I knew I needed to add to my list of cold treats, and what better addition was there than these incredibly tasty and equally cute hibiscus popsicles? These sweet treats are the popsicle flavor you didn’t know you needed. Turns out, hibiscus flowers are just as edible and delicious as they are beautiful, and they make a mean popsicle flavor! Made from tea and with sugar and salt, these 3-ingredient hibiscus tea popsicles are the perfect little snack to enjoy this summer. Let’s pop!

You’ll just need a handful of ingredients for these summery treats!

Hibiscus Tea: First, prepare 3 cups of your favorite hibiscus tea (we just used the tea leftover from making Hibiscus Tacos!)Sugar: To sweeten things up a bit, use ½ cup of sugar. Honey will also work well here, but no-calorie sweeteners won’t do the job (they’ll make for a very hard ice cube rather than a bitable popsicle!)Salt: Add a pinch of salt to balance out the sweet and sour tones.Optional: Optionally add edible flowers to make your popsicles extra cute!

Flavor add ons & Variations

Want to add some fruity flavor to your popsicles? You have a couple of options! Go the tangy route with either lemon or lime, or stick to a berry flavor with either fresh strawberries or blueberries.

Tangy: Squirt a bit of lime or lemon juice into the mix to add a zing! Strawberry: To add a yummy strawberry flavor to the hibiscus, you have two options. First, you can chop about ½ cup of strawberries and add to the mix for subtle strawberry chunks throughout the popsicles. Or, you can blend the strawberries with the other ingredients and use that as the mix instead.Blueberry: For blueberry popsicles, use the same methods as outlined for the strawberries!Make it Mexican: Blend in some fresh seasonal fruit and top it with tajin, like we do in these Mexican Paletas!
