​ We wait for the winters in India for the sweet red carrots as they make an amazing fresh juice and a decadent Gajar ka Halwa. Carrot juice or carrot pudding is a great way to introduce carrots to toddlers. This simple method of using a juicer gathers the fresh juice in 5 min with no prepping required. Any leafy greens add a hint of aroma and I think mint does justice to that. It’s a great way to stay hydrated after a workout or a summer afternoon. While one may use the blender method as well, you need to use a high-speed blender to blend the carrots of the winter season. I don’t recommend any water or coconut water to juice while blending as that may lead to digestive issues. When I make this juice in summer, we have to use orange carrots and I add an apple and orange to balance the flavors in the juice. Fresh Red Carrots: This recipe uses red carrots of the winter season. they are locally available in India. They are perfectly sweet and juicy for this recipe. You may use the orange carrots as well. Since orange carrots are less sweet than red ones, you may increase the quantity or add a large apple or orange along.  Red Raw Beets: Fresh red beet works best and I love the earthiness of the beet in this juice. I have used half of it as they are bitter. If you want to add more beets, then increase the quantity of carrots as well. Ginger: Fresh ginger root works well for adding a hint of warmth and a spicy kick. A small root is fine or else the juice would be too strong to consume. Mint: I have used fresh mint leaves. While you may use cilantro or coriander, in my opinion, the best flavor comes from the mint leaves. Pink Salt: Adding a little salt balances the flavor. You may use normal salt as well.

How To Make Carrot Beet Ginger Juice With Juicer

Step 1. Prep ingredients

Peel the carrots, beet and ginger. Wash them under the tap water to remove any dirt or mud. Let them sit for a while. In the meantime, You may sort the mint leaves and wash them too. Drain the excess water by putting the washed mint leaves in a sieve. Roughly chop the carrots (for the blender method) You may skip chopping for the juicer method.

Step 2 Add carrots and other ingredients to the juicer

I have used the Philips Juicer and it works best. It is a centrifugal one. You may use a masticating juicer as well. You may use any good quality brand of juicer. Add everything to the juicer and make sure to put a heavy jar or pan below the endpoint to collect the juice.  For the Blender method-  In a blender, combine the sliced carrots, chopped beet, grated ginger, and mint leaves. Blend until smooth. Transfer the contents of the blender to a large bowl covered with a muslin cloth to filter out the pulp separately.

Step 3. Serve It

Add a pinch of pink salt and mix well. Serve this vibrant beet carrot ginger juice fresh and enjoy!

Expert Tips

This recipe uses half a kg of carrots (around 6 large carrots), half a piece of beet, a tiny ginger root, and a few twigs of mint. If you are scaling up, make sure to maintain the ratio. If you are using the blender method, make sure to use a good blender with high speed, or else the carrots won’t give any juice. You may strain the juice to remove the pulp. The pulp can be reused in making soups or smoothies. The juice must be consumed within a few minutes of making and we can’t store the juice as consuming it after storing may affect the digestive system.
