This pizza is a celebration of one of the most sought-after ingredients… black truffle! Using truffle oil and adding thinly sliced mushrooms on top of this classic pizza with parmesan and garlic takes it to new heights. Make it your own with a few ingredient variations, and go for either a soft or crispier crust, depending on what you like!
Truffle Pizza versus mushroom pizza
To know what fresh truffle pizza tastes like, you have to know how a truffle tastes! Truffle mushrooms are earthy-tasting mushroom-like fungi. But their flavor is more concentrated than mushrooms in a garlic-y sort of way, and they make a great addition to savory or salty dishes. In short, they taste incredible on this pizza. When the truffle taste mixes with the dough, mozzarella, mushrooms, and garlic, it’s like a flavor party!
here’s what you need
Black truffle pizza is made “white sauce” style with olive oil and cheese (i.e., we’re skipping tomato sauce). The reason we go this route with ingredients is because these are all “milder” tasting, so they work well with the intense flavor of the truffles!
Olive Oil: We’ll use part for cooking the mushrooms and part for spreading on the dough. Mushrooms: Use 8 oz of sliced mushrooms. I used button because they’re easy, but any mild mushroom will work. Garlic: Fresh minced garlic is ideal for pizza. But you can use ½ teaspoon of garlic powder if you don’t have fresh cloves. Pizza Dough: As for the pizza dough, any 12-inch dough will do. If you’re an overachiever, you can make your own with this easy homemade pizza dough recipe! Cheese: You’ll need a combination of mozzarella cheese and parmesan cheese. Mozzarella is more mild, providing the perfect base for the truffle oil, while parmesan adds a salty, savory flavor. Truffle Oil: Finally, add the truffle flavor by drizzling 1 tablespoon over the pizza before serving. A little bit goes a long way (here’s how to make your own truffle oil)! Optional: If you made homemade truffle oil or black truffle butter and have leftover truffles, add them to this pizza! You can’t go wrong with extra truffles.
Making pizza is pretty simple
The most labor-intensive part of this recipe involves cooking the mushrooms. That is to say, it’s a very easy process! Step 1: Prep The OvenTo begin, place a pizza stone (if you have one) in the oven. Preheat the oven and pan to 500ºF (260ºC). This is going to ensure maximum crispiness for our crust! Step 2: Cook The MushroomsAdd 1 tablespoon of the olive oil to a large sauté pan and heat over medium heat. Add the sliced mushrooms and the garlic. Cook until the mushrooms sweat out their moisture and begin to turn golden brown and crispy. Step 3: Assemble The PizzaRoll the pizza dough out onto parchment paper and brush the top with the remaining 1 tablespoon of oil. Sprinkle on the cheese, then top with the cooked mushrooms. Bake for 10-12 minutes or until the crust is golden brown. Step 4: Add Oil and ServeFinally, drizzle truffle oil on the pizza right before serving.
What type of truffles are best for pizza?
When it comes to black vs. white truffles, black truffles tend to have a more intense flavor, while white truffles are a bit subdued. Different dishes work better with white or black, depending on the ingredients! Pizza toppings can be intensely flavorful! Since we want to highlight the truffle flavor, we’re using mild ingredients like white sauce and creamy, simple mozzarella.
Truffle pizza variations
I added shaved truffles to the pizza, and I can promise you it was tasty.
Add burrata cheese: This is an ultra-creamy soft cheese, similar to buffalo mozzarella. Use alfredo sauce: This is a thicker white sauce base and is a great option if you like a bit more sauce and a bit less cheese. Add a green vegetable: This could be fresh arugula or basil (added after baking) or roasted broccoli (added before baking).

I recommend pairing fresh truffle pizza with a veggie dish to offset the dough or an equally carb-loaded option worthy of a true pizza party! Here are some of my favorite pairing options.
