Elevated S’mores flavor! I’ve added honey to this cookie dough and use semi-sweet chocolate chips to cut the sweetness a little bit! Super Easy To Make! These cookies are done from start to finish in 30 minutes! The recipe is straightforward and easy to make. Perfect for beginners! Gooey and delicious! Just like the classic campfire treat, these cookies are gooey with the addition of mini marshmallows that bake right into the cookies and create puddle of caramelized sweetness as well as chewy marshmallow bites throughout!
Butter. I use salted butter in this recipe. You could use unsalted if you prefer, but it’s a personal preference! You could even brown the butter to really deepen the flavor giving a real campfire vibe! Sweeteners: Light brown sugar and honey. Using a combination of the two is a match made in heaven. Honey adds a subtle sweetness that enhances the brown sugar, adding to the cozy vibes and giving these a chewy texture! Eggs. I use both one whole egg plus an egg yolk in this recipe. It adds just the right amount of moisture to the cookie giving it the texture you’re looking for! Vanilla Extract. What would a good cookie recipe be without a little vanilla? You could also use vanilla bean paste! Baking Soda and kosher salt. Common in most cookie recipes baking soda aids in allowing the cookies to rise the perfect amount, and salt aids in flavor! All purpose Flour and Graham Cracker Crumbs. You will use 6 full graham crackers that you coarsely crush along with the flour. This adds flavor and sweetness, but also texture. You don’t want to crush the crackers into a fine crumb, leave them coarsely crushed! Chocolate Chips. I use semi-sweet chocolate chips, but if you want to keep it authentic you can use milk chocolate chips too. Mini Marshmallows. These give the gooey-ness that makes these cookies really special!

What if the marshmallows ooze out while baking? Don’t worry about that, I love the oozy marshmallow bits. They stay chewy in the cookie and get a little crispy on the baking sheet. BUT be careful not to over-bake these guys, because the marshmallow will burn! How will you know when they’re done baking? The tops will be just set and the edges will be lightly golden. Even if you underbake these slightly they will be great. Just allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely! Baking sheets vary and can change the outcome. Note that the type of baking sheet you use will effect the amount your cookies spread. I use a thin aluminum baking sheet and always always use parchment paper! An insulated, or very thick-bottomed baking sheet is not recommended for these cookies (or any cookies that need browned edges).
