Ingredients

Nutella - is the star ingredient of this pudding. The smooth and melting Nutella brings this recipe to another level. You may use cocoa powder, and peanut butter or use dark chocolate as well. Biscuits- The biscuits add a crunchy texture to this pudding. I have used oats raisins from Farmlite as they are loved by all in the family. You may use Marie, Digestive, or any biscuits of your choice. Custard Powder- helps thicken the milk without using gelatin. Any flavor of custard works. When custard mix is added to hot simmering milk, the texture of milk curdles up and it thickens. Milk-Single Toned Dairy Milk works best. For making a vegan pudding, you may use coconut milk or almond milk. Chocolate- I have used dairy milk’s silk chocolate to top the pudding. Any chocolate chunks or dry fruits work great as a topping. Sugar- Granulated sugar works best. You may use stevia to make low-carb pudding. Cardamom Powder-adds aroma and flavor. You may use cinnamon powder as well.

How To Make Chocolate Biscuit Pudding

Step 1 Make Nutella Custard

Gather all the ingredients. In a large heavy-bottomed saucepan, heat the milk on the stovetop on simmer flame. Once the milk is warm, take 2 large tablespoons of it in a small bowl and add custard powder and whisk well till smooth. Keep it aside and let the milk boil with cardamom and sugar. Add the custard mix to the milk boiled and keep stirring or else the lumps would be formed. Make sure the flame is on simmer. The custard mix will thicken the milk and Nutella would make it chocolaty brown colored. Once the milk is thickened, add Nutella and mix for 1 min and close the flame.

Step 2 Assembling The Pudding

Let the Nutella custard cool for a few minutes. Keep the pudding cups/ glasses ready. Place the biscuit, then custard mix, another layer of biscuit, and custard mix. Keep doing this till you cover ¾ of the glass height. My glasses are small and I could layer them up twice. Top the pudding with chunks of chocolate or nuts.

Step 3 Setting The Pudding

Keep the pudding glasses in the refrigerator for at least 2 hours to make the pudding set and cool. Serve it chilled! Enjoy and remember to share your views about it!!

Storage Suggestions

The leftovers can be refrigerated in a dry container with a lid for about 2-3 days. I would wonder if there are any. It can be frozen for about 2 weeks.

Expert Tips

Use a heavy-bottomed pan or else milk may stick to the bottom of the pan and get burnt easily. While adding custard mix, keep stirring, or else the pudding would have lumps. Let the pudding sit for some time at room temperature and then store it in the refrigerator for cooling off.

Variations

Vegan Pudding- Use dairy-free milk to make this recipe fully vegan. Chocolate Pudding Shots- Add a hint of vodka to make this pudding a shot for elders. Add another ingredient- You may add any fruit like banana, mango, or strawberry to this pudding.
