Why is beyond me because it’s the easiest thing in the world to make! You literally whisk everything together and let the chia seeds do their thang in the fridge, and voila – you have a healthy dessert that tastes JUST LIKE the real thing. Oh, and I don’t love candy canes so much, but those soft peppermint sticks are my weakness. Sooo good.” – Ashley So, this chia seed pudding is epic. We came up with this idea when we were craving a mint pudding over the holidays but wanted a healthier take. Insert – chia seeds! We took our classic chia seed pudding recipe and made it festive with some peppermint extract, and it’s just delicious. It’s got the perfect balance of chocolate and peppermint to make all your Christmas dreams come true. And you can make it in under 5 minutes!

What’s in Chocolate Peppermint Chia Seed Pudding?

Cocoa powder: We used unsweetened cocoa powder for this recipe to add a chocolate flavor without extra sweetness.  Chia seeds: Full of healthy fats, these little seeds plump up in liquid, creating a gel-like creamy pudding-like texture. It’s also packed with fiber, which is super filling!  Maple syrup: We love using maple syrup because it’s a natural sweetener and adds a subtle maple flavor to this chia pudding. Use pure maple syrup for this recipe.  Coconut milk: It adds a luscious, velvety texture to the pudding while infusing a subtle coconut undertone. I used an unsweetened carton of coconut milk for this recipe.  Peppermint extract: Adds that festive Christmas flavor! I highly recommend finding some crushed peppermint (or just crushing up some candy canes), to make it look extra holiday.

Uh, is anyone else obsessed with candy canes? It’s one of my favorite parts of the holiday season, and I am totally that weirdo that stocks up when they all get marked down at Target the day after Christmas.

Dark Cocoa Powder: If you want to get super indulgent, use dark cocoa powder.  Protein Boost: Try adding some plain Greek yogurt or protein powder to your pudding.
