Have you ever seen such a beautiful site? These Churro Waffles are not only outrageously delicious, but they are so easy to whip up. I am not always awake enough on school mornings to make my children a from-scratch breakfast. They eat their fair share of cereal, oatmeal, and granola Monday – Friday. BUT I happen to be the BOSS of weekend breakfasts. So the whole idea today is that these very weekend-friendly Churro Waffles can TOTALLY be made Monday – Friday without a lot of extra work. The reason they are so easy is thanks to Fleischmann’s® Rapid Rise™ Yeast. You can make the waffle batter the night before, let it rise in the fridge overnight and in the morning, you just heat up your waffle iron and bing, bang, boom you have warm, yeasty waffles that have quickly become a family favorite in my house. With half the recipe already complete, and the time that the Rapid Rise™ Yeast has saved, you can even bake a little extra by turning these overnight waffles into CHURRO WAFFLES with just two simple steps, which make them perfect for special occasions, like Mother’s Day. Mom might even like it if you save these waffles for dessert by topping them with some ice cream and caramel sauce! The time that you save prepping these the night before, will give you plenty of time to give mom all her Mother’s Day presents…hint, hint, husband! Let’s talk about how easy these come together. You just mix together the dry ingredients… I like to whisk them together so everything is evenly mixed in. You add in some warm milk, melted butter, vanilla and eggs. Mix it just until it comes together. That’s it! Now you can cover the batter, stick in the refrigerator until the next morning. But if you want waffles ASAP, no worries. The Rapid Rise® Yeast works quickly if you cover the batter and place it in a warm, draft-free place to rise. It will only take about 45 minutes. Using yeast in waffles is fairly new to me, but my kids really love the extra flavor the yeast gives the batter. When you’re ready to make the waffles, just heat up your waffle iron and make them like you would any other waffle! I used 1 cup of batter for each waffle in my Belgium Waffle maker. To make these into “Churro” waffles, all you need to do is brush each waffle with melted butter and sprinkle on some cinnamon sugar! These taste exactly like warm churros! And like I said, if you want to save your sweets for dessert, how epic would these be topped with ice cream and drizzled with caramel sauce? Seriously, yes.
