Coconut rice Arbi fry - lunch box combo

Firstly pressure cook Seppankizhangu with required salt, water, and turmeric powder for 1 whistle drain the water, add marination and refrigerate for 1 hour Wash rice and add to the cooker separator. Add coconut milk and water; pressure cook for 2 whistles fluff the rice and keep aside if you are using frozen coconut thaw

Coconut rice

Use coconut oil and add the ingredients mentioned in “ to temper” Add coconut and saute well till moisture evaporates and coconut slightly change color  finally, add  rice and required salt; mix well

Arbi fry

Add enough oil to shallow fry and heat the oil When oil turns warm add marinated seppankizhangu and Curry leaves; saute in low flame roast well to your desired texture  finally, add asafoetida and turn off the stove
