Smoothies are like the Swiss army knife of recipes. With just a few ingredients and 5 minutes, you can whip up something that’s portable, nutritious, and delicious! Collards might sound like an odd choice for a smoothie, but it’s no different than an apple kale smoothie. The result of this one, though, is a sweet and tangy sip that you’ll never want to stop drinking. And being the leafy green collard greens are, this smoothie is packed with potassium, calcium, and Vitamin K, to name a few of its many nutrients.
Here’s what you’ll need
Collard Greens: These form the bulk of the recipe and thicken up with the addition of the banana and yogurt! Banana: It should be previously sliced and frozen. Slicing it will help it blend easier, and a frozen banana will create a frosty consistency. Orange Juice: I love how the acidity of orange juice masks a lot of that collard flavor. Vanilla Yogurt: Vanilla yogurt adds flavor and helps to thicken the smoothie.
Making this smoothie is so simple
You can make this smoothie with your eyes closed. Just blend all of the ingredients in a blender until smooth!
Smoothie Variations
Smoothies are pretty versatile, and this one is no exception.
Swap The Banana: If you don’t have a frozen banana on deck, you can use frozen mango, strawberries, or blueberries. Other Yogurt Options: Vanilla yogurt is recommended, but other flavors will work, too. A banana-flavored yogurt will enhance the banana-ness of the smoothie, and other options include strawberry and peach. Other Leafy Greens: You can use spinach or kale in place of collard greens in this smoothie recipe. More Protein: You can add a bit more protein to this smoothie with peanut butter or vanilla protein powder.
