You might think making meat-free tacos is a challenge—chickpeas seem more at home in a vegetarian gyro, and tofu tends to scare off the meat eaters with whom you may share a dinner table. But let me tell you, there’s one ingredient that’s a universal crowd-pleaser: creamy, dreamy avocados! So today, we’re ditching the faux meat and diving into crispy avocado yumminess with this next-level taco recipe (we’re basically making avocado fries and serving them in taco shells!). As someone who’s tried my fair share of vegetarian tacos, I’ve learned that crispy avocado is where it’s at. I used to bake my avocados, but after discovering the air fryer, I’ve never looked back! Air-frying gets them ultra-crispy in no time, but don’t worry, you can totally bake them, too. Either way, these avocado tacos are about to become the star of your taco nights!

You’ll Need These Ingredients

Avocados: We’ll coat avocado slices with an egg wash, all-purpose flour, and panko and either bake or air-fry them to crispy perfection. Pineapple Salsa: Then, we’ll make a quick salsa with chopped pineapple, tomatoes, red bell peppers, red onions, garlic, jalapeño, cumin, and salt. (Feel free to substitute your favorite store-bought salsa!) Chipotle Sauce: Made from a simple combo of plain yogurt, mayo, lime juice, and adobo sauce (from a jar of chipotle peppers). This stuff is always a hit at taco nights! Tortillas: Flour tortillas pair unbelievably well with avocados (learn how to make flavored tortillas here!). You can also use corn tortillas, though.
