Published 2/22/2017 • Updated 2/29/2024 These crockpot steel cut oats are a spin off of one of my favorite Girl Scout Cookies – Samoas! I was totally in GS in grade school, and I couldn’t get enough of the coconut, caramel, and chocolate flavors of a Samoa cookie. I channeled those flavors into this slow cooker oatmeal recipe, and OMG it’s so good!  Just toss all your oatmeal ingredients (except shredded coconut) into a crock pot and let it do its thing for a few hours while you sleep. Wake up to the delicious aroma of warm oatmeal and get ready to indulge in this yummy, high-fiber breakfast.

Here are a few ideas to get you started: Steel cut oatmeal: While we recommend using regular steel cut oats for this crock pot recipe, you can also use different types of oats like instant steel cut oats if necessary. Just note that you’ll need LESS liquid.  Coconut milk: If you aren’t a fan of coconut milk, you’re welcome to use almond milk or another non-dairy milk of your choice. Just make sure to use the same amount called for in the recipe. Maple Syrup: Hot out of maple syrup? Brown sugar is a great option to use as a substitute sweetener for these slow cooker steel cut oats. Delicious additions: Don’t be afraid to go wild with your favorite toppings! We’re big fans of peanut butter, fresh fruit, toasted almonds, or a drizzle of honey.

Bring everything to a boil over medium-high heat and then cover. Turn to low and let simmer for around 25-30 minutes or until thick and creamy.

This crockpot steel cut oatmeal can be stored in the refrigerator for up to 5 days, making it perfect for meal prep. Simply reheat in the microwave or on the stove with a splash of milk or water to loosen it up. You can also freeze this oatmeal in individual portions for easy grab-and-go breakfasts.
