Should I roast milk powder golden brown?
Yes, the uniqueness of Dharwad peda is caramelizing the milk till it turns golden brown. I did the same with milk powder. Always roast milk powder in low- medium flame and mix well them in between for even roasting. It took me around 12 minutes to roast milk powder.
Will roasted milk powder taste bitter?
No, it gives a tasty caramelized flavor to the peda. Slow roasting is the key. Dharwad pedha is Indian caramel milk fudge
Will milk powder Dharwad peda tastes like milk peda?
No, though milk powder is the key ingredient for both the peda, both peda taste so different.
Can I roast milk powder in high flame for quick peda?
No, it is very important to roast milk powder in low- medium flame. Roasting milk powder in high flame might turn burnt and that gives bitterness to the peda recipe.
Can I use water instead of milk?
Milk gives richness to the peda so I would recommend using milk for the best Dharwad peda. Also adding milk little by little gives a nice grainy texture to the pedha.
Can I use regular sugar for darwad peda?
For coating/rolling, I have used fine sugar but for peda preparation always use powdered sugar. After adding the powdered sugar we don’t cook so you shouldn’t use powdered sugar. I have used store-bought confectioners sugar but you can also powder the sugar at home and use it. Adjust the sugar according to your taste.
Can I roll Dharwad pedha right after mixing?
Yes, you can make it as soon as they turn warm enough to roll. Always grease your hand with little ghee for easy rolling
Can I skip rolling in sugar?
Though this is not a traditional dharwad peda preparation to replicate the taste and texture I have rolled with sugar. You can skip according to your taste

Ingredients:
Peda
1 cup milk powder 4 tablespoon milk + 1 tbsp 4 tsp ghee 1/2 cup powdered sugar 1/8 teaspoon cardamom powder
Rolling Peda
1 + 1/2 tablespoon of fine sugar | powdered sugar little ghee to grease
How to make Darwad peda with step by step pictures
Firstly add 1 teaspoon of ghee and 1 cup of milk powder in a wide heavy-bottomed pan
Turn on the stove in low to medium and roast
After 2 minutes add 1 teaspoon of ghee and continue roasting
Mix well in between for even roasting. It takes around 10-12 minutes to roast milk powder to a golden brown. Avoid turning the flame to high
Once milk powder turns golden brown add 2 tablespoon of milk and mix well
Furthermore, add 1 tablespoon of milk and mix well
Furthermore, add 1 teaspoon of ghee and mix well
Add 1 tablespoon of milk and mix well
Furthermore, add 1 teaspoon of ghee and mix well
Add 1 tablespoon of milk and ghee; mix well
Finally, add powdered sugar and turn off the stove
Mix well and make sure sugar is well blended
Immediately transfer the peda mixture to a wide vessel
After 2 minutes (or when you can handle peda mixture with hands) grease your hand with little ghee and pinch a small portion and shape into cylinders/balls/pebbles/logs or as you wish
Finally, roll the peda in sugar. Dharwad pedhas are ready😊
