Mint Leaves- Fresh Mint leaves add the perfect color and aroma to this salad. While other greens can be used, I love the refreshing salad made by using fresh mint leaves.

For The Salad Dressing

Peanut Butter- Coating the salad with peanut butter makes it creamy and gives it a melt-in-mouth texture. Maple- While the apples are sweet and juicy, adding a hint of maple makes it sweeter and you may skip it. One may use honey as well. But then the salad won’t be vegan. Lime Juice- Sweetness and savory flavor blended with mild tangy flavor from lemon juice make this salad totally versatile. You may swap it with balsamic vinegar or white wine vinegar for the perfect tangy flavor. Salt & Black Pepper- Salt and black pepper powder help balance the overall flavor of the salad.

Step 1 Chop The Veggies

On a chopping board, chop the cucumbers, apple and mint leaves as desired. I have chopped as well as peeled the cucumbers. The thin peels have been rolled and placed at the top of the salad to make it look appealing.

Step 2 Prep The Dressing of The Salad

In a large bowl, add peanut butter, maple, lemon juice. Add salt and black pepper. Give it a good mix.

Step 3 Toss Chopped veggies with the Dressing
