While my mind is ready for fall and apples and pumpkin and sweaters, the weather outside is telling me a different story. Mama Earth thinks summer needs an encore. And really, who am I to argue? In a few months I will be fully complaining about the cold temperatures WISHING for 90-degree days. You know it’s true. So in the meantime, I think I will embrace the last warm days of 2016 with a Summer Berry Slab Pie and a Summer Red Spritzer. Are you with me? What I love best about the spritzers paired with the slab pie is they’re both completely casual. Slab pies are a great party option because they serve a lot of people AND they don’t have to be perfect. They serve up a lot like a cobbler, they’re great warm or room temperature and can be served with or without ice cream. I used fresh berries, but you can ABSOLUTELY use frozen (and thawed) if you need to. And while I gave you a full recipe with a homemade crust option, you can cheat a bit and use pre-made rolls of pie crust if you’re in a pinch. Again, this recipe and wine pairing should be easy, casual and fun! No stress here! And like I said, ice cream is optional…but I mean… As always drink (and eat) responsibly.
