Ingredients

For The Ice-cream

Banana- Ripe, over ripe bananas work best for this sorbet/ ice cream recipe. Ripe bananas are softer, sweeter and add creamy texture to this ice cream. I prefer freezing bananas overnight or for few hrs. Vegan Milk- Well, we need little or no milk. You may swap milk with water. The milk is added for blending the frozen bananas smoothly. I have used the local brand of soy milk. Feel free to use any dairy-free milk of your choice. Vanilla Essence- I have added vanilla essence to have a fruity aroma in the ice cream. If you are looking for more authentic flavor, you may use the vanilla extract.

For Topping

Salted Peanuts- Since the recipe didn’t use any salt, I had topped the ice cream with salted peanuts. You may garnish with chopped nuts or cherry. Maple Syrup-This banana ice cream is made without any refined sugar. I had glazed it with maple syrup. You may swap it with caramel sauce. Chocolate Chunks- Use dairy free choco chips for extra sweet chunky flavor. I didn’t have choco chips, I used the small chunks of chocolate. Cocoa Powder- Though optional, cocoa powder adds intense chocolate flavor.

Variations

Add another fruit- The same recipe works for mango and peach. Add dairy- If you want it more sweet, feel free to add Milkmaid. It adds more creamy and sweetness to this ice cream. Add another spice- You may experiment with cinnamon and cardamom spices for adding rich flavors.

Use ripe bananas: Ripe bananas are naturally sweeter and provide the best flavor for your ice cream. Make sure the bananas have some brown spots on the skin, indicating ripeness. Freeze the bananas: Freezing the banana before blending will result in a creamier texture. I have frozen the banana as is. You may freeze the banana slices by laying them on a parchment-lined baking sheet and freeze them for a few hours or overnight. Blending Frozen Banana: Blending frozen banana can be a bit of challenge. Pulse with pauses and finally the banana would turn into a creamier addictive puree. Serve immediately or freeze: You can enjoy the ice cream immediately after blending for a soft-serve texture. If you prefer a firmer consistency, transfer the mixture to a freezer-safe container and freeze for an additional hour or two before serving.

Detailed Recipe With Steps

Step 1 Freeze the bananas and blend them

Before you begin making this ice cream, factor in the freezing time of bananas (3-4 hrs or overnight. I had frozen 2 bananas without peeling off and results were superb. Gather the ingredients and add frozen chopped banana, vanilla essence, maple syrup(1 tbsp) and little vegan milk. Blend it to make a creamy puree.

Step 2 Freeze Again

Pour the banana puree into a plastic container with tight lid. Freeze again for 2-3 hrs

Step 3 Serve it cold

The decadent Vegan banana Ice cream is ready. Top it with peanuts, maple syrup, cocoa powder and chocolate chunks. Enjoy it fresh.
