Ingredients
Apple- The juicy tangy apples work best for this recipe. The firm and crisp apple are recommended for pie or cobbler. I have used locally available red apples. You may use any local good quality apples. Whole Wheat flour- I love the brown crispy crust that I get from baked whole wheat flour. Trust me this crust won’t be the same in APF. If you are using APF, the results may vary in the crispy texture of the cobbler. For making gluten-free cobbler, you may use almond flour, ragi flour, or buckwheat flour. The batter would be thick as these gf are denser than APF or wheat flour. You may need to add more milk to make a smooth batter. Corn starch or corn flour- This adds a layer to apple coffee mix and helps them stick to the batter easily. Coffee powder- I loved the amazing aroma and flavor of the coffee. I have used Nescafe’s instant coffee powder. You may use vanilla essence or cocoa powder too. Desi Ghee- Baking doesn’t come naturally to me. Using ghee in baking sounded funny to my husband but the good results were loud enough. I have been using a mix of ghee and butter or olive oil in baking and we love it. If you wish to use oil only, you may substitute oil with ghee in a 1.25: 1 ratio. Butter- Room temperature salted butter works well. If you are using unsalted butter, then add a little salt to balance the flavors. Sugar- Granulated white sugar works best. For making a low-carb cobbler, you may use stevia instead. Spices- Freshly grounded Cardamom and Cinnamon powder are used. You may add any other spice as well. Milk- I have used Single toned dairy milk. You may use full-fat milk for a more creamy batter. For making this cobbler vegan, you may use coconut or almond milk. The flavor of the cobbler would change due to that. Baking soda- A leavening agent to make the cobbler fluffy. Lemon juice- I have added fresh lemon juice to add a bit of tangy flavor. You may add lemon zest as well. Walnut- I love walnuts with apple desserts. Chop them and top the cobbler with them for a crunchy healthy bite! Honey(Optional)- Though I haven’t used it, you may drizzle the cobbler with honey for a more sweet and smooth taste.
How To Make Apple Cobbler Without Egg
Step 1 Make Apple Coffee Mix
Thin Slice the apples and keep aside. In a small bowl, mix coffee powder, spices, sugar, little water and cornflour. add the Apple slices and coat the mixture over it. Keep it aside.
Step 2 Make Wheat Batter For Cobbler
Take another bowl and add sugar and butter to it. Mix them well. Gradually add wheat flour, desi ghee, spices and mix well. Add milk and mix again. If the batter is thin, add more wheat flour else add milk gradually. Add baking soda and don’t mix the batter too much.
Step 3 Assemble and Bake
Grease the baking dish-round or square. First add layer of coated apples. Top it with wheat batter. Garnish it with walnuts and bake it in OTG @ 180 degrees (OTG was preheated for 10 min @ 100 degrees} for around 10 min or till knife comes out clean.
Step 4 Serve It.
The aroma of baking fresh apple flavored with coffee, cinnamon, cardamom, and a topping of freshly mixed wheat batter topped with walnuts, spreads from my kitchen to the neighbors. Serve the apple cobbler without eggs and Enjoy!!
Expert Tips
Let the apple coffee sugar mix rest for 10 minutes to blend in the flavors. Make sure to grease the baking pan before transferring the apples and batter. After adding the baking soda, don’t overmix the batter. If the mixture is runny, add the dry wheat powder to balance it. Though mine was a bit runny, the end result was good. You may spread the batter unevenly in a few lumps, which is fine. The milk and butter shall be at room temperature.
Storage Suggestions
We didn’t have any leftovers and I am sure that would be your case. Still, if you have any leftovers, store them in a dry container with a lid in the refrigerator for about 2 days. I won’t recommend freezing it, though.
Variations
Apple cobbler with Cake Mix- For a busy you, you may use a cake mix to make apple cobbler. Gluten free Apple Cobbler- use any of the gf flours to make gf cobbler. Make sure to make a smooth batter and expect the cobbler a bit denser than usual. Vegan Apple Cobbler- Use vegan milk, vegan butter for making this cobbler vegan. Add Another Fruit- Though not tried, the same recipe would work well with other fruits too- Peach, berries, etc. Add Another topping- Top with roasted pecans, almond or a scoop of icecream with this warm and cozy cobbler.
