Fried cheese is our default order whenever we go to Italian restaurants, and in a couple of fast-food chains likes McDonald’s and Burger King. My son loves it so I tried frozen mozzarella cheese sticks from Indian stores, but was not happy with the result. After various trials and errors, I started making my best homemade eggless cheese bites in this way and our entire family loves it.

Traditionally mozzarella cheese is used for cheese sticks but you can use cheddar cheese or any cheese of your choice. If you are using cheddar adjust the salt accordingly. Next to Cheese chips, mozzarella cheese sticks are my kid’s favorite after-school snacks.
Should I refrigerate Eggless Mozzarella sticks?
Yes, I would recommend a few hours of refrigerating as it will yield a better coated outer layer for a mozzarella cheese stick.
Why did my cheese melt while deep frying?
Make sure you dip the cheese sticks well in the batter and coat an even layer of breadcrumbs.
Can I add double-dip batter and breadcrumbs?
I was experimenting with eggless mozzarella sticks with single dip and double-dip. Personally, my family likes the single dip. I feel the thin outer layer and gooey cheese layer tastes best. Double dip makes an even coated crispy outer layer but I feel the outer layer dominates the taste. You can add double-dip according to your preference
Can I use regular breadcrumbs?
I have used panko bread crumbs. You can use plain panko or regular breadcrumbs or Italian panko breadcrumbs if you like Italian flavors. Regular bread crumbs might give dark brown cheese bites compared to panko bread crumbs.
Can I freeze the mozzarella cheese stick?
Dip the sticks in the batter and coat in breadcrumbs and freeze it. It stays good for weeks maybe longer but honestly in our home it won’t last long. I used to make a batch and freeze a few. Frozen cheese sticks stay good for weeks. Always thaw the frozen cheese finger for 10 minutes before frying.

Ingredients:
7 String cheese 1/4 cup Maida 2 tablespoon Cornflour 1/8 tsp Garlic powder Required Salt 2 tablespoon oil 1/4 cup + 1/2 tablespoon Water Oil to fry 1 cup panko Bread crumbs
How to make Eggless Mozzarella sticks with step by step pictures
Firstly take mozzarella cheese sticks out from the fridge
In a mixing bowl add maida, cornflour, garlic powder, salt, oil, and water; mix well
If the batter looks thick add extra water else skip
Cut all the string cheese sticks into two pieces
Spread the bread crumbs on a wide plate and set them aside
Add the cut string cheese into the batter; mix well and rest for 5 minutes
Tap the excess batter and coat the marinated cheese stick in breadcrumbs, turn and coat well
Refrigerate for at least 3 hours
Before frying take out the cheese stick from the refrigerator Add oil to a pan and when oil is hot, gently add the cheese stick
Turn and cook all sides evenly till the stock turns golden brown. Serve with marinara sauce or ketchup
