Lettuce makes the perfect healthy, low-carb swap for tortillas (if you do it right!). Today, we’re using lettuce boats to create an even lower-carb version of our go-to Vietnamese spring rolls. These vegetarian-friendly wraps are loaded with raw veggies, like bell peppers and carrots, fresh herbs, and the most addictive Asian-style almond butter sauce to finish it off!

Lettuce Leaves: The best lettuce for lettuce wraps is mini romaine lettuce (seen in the pictures) or butter lettuce. Both provide a perfect cup (or boat) shape that holds the fillings well. Use crisp lettuce leaves! Crunchy Veggies: Julienned veggies help make these lettuce wraps more filling. Cabbage, carrots, red bell peppers, and radishes are all great. Avocado: A ripe avocado is essential in this recipe! It makes veggie lettuce wraps more creamy (and less like a literal pile of vegetables). Herbs: Be generous with the fresh basil and parsley! You can also use cilantro here. Asian-Style Almond Butter Sauce: Almond butter sauce is the cherry on top, showcasing soy sauce, ginger, and lime. Make your own almond butter for the best flavor!
