Elevated Avocado Toast

Avocados are nature’s superfruit. And yes, they are a fruit because they have a seed! They are packed with healthy fats and are great on anything—literally anything. One of the many things they are good on? Toast. Avocado toast is in chic cafes all over the place. So, why not make it at home to save money and prepare it exactly how you like it? We’re whipping up FIVE delicious variations of avocado toast that can be enjoyed at any time of the day. We’ve got classic avocado toast, Mexican-inspired pico de gallo, farm-fresh goat cheese and chives, super simple everything bagel, and avocado toast with egg. Let’s get toasty!

Here’s What You’ll Need

To make this healthy avocado toast, you just need two base ingredients (and toppings)!

Bread: I love sourdough or artisan bread for a full slice of avocado toast. Otherwise, a baguette is great for bite-size servings! Just make sure it has some good structure to hold up to all the delicious toppings. Avocado: Any type of avocado will work, but a ripe one is key. To pick the best avocado, find one that yields a little bit when squeezed (like squeezing a memory foam pillow). Classic: Lemon juice and olive oil make for a super bright and fresh bite! Pico De Gallo: You only need store-bought pico de gallo and avocado. You can also make your own pico de gallo super easily! Goat Cheese And Chives: This toast has creamy goat cheese, crunchy radishes (best texture!), and flavorful chives that make it so darn good. Everything Bagel: Simply top your perfectly ripe avocado slices (find out how to slice avocados here!) with everything bagel seasoning. Fried Egg: You’ll just need an egg, avocado oil to fry it, and some hot sauce (if you’re feeling wild!).

Making This Avocado Toast Is So Easy

Once you’ve toasted the bread, choose from one of the following five flavor options to complete your meal. Step 1: Make It ClassicScoop the avocado into a bowl and mash it together with lemon juice, oil, salt, and pepper. Spread the avocado mixture onto toasted bread. Step 2: Spice It Up With Pico De GalloCut the avocado into cubes. Toss the avocado, pico de gallo, salt, and pepper in a bowl. Spoon everything onto toasted bread. Step 3: Next Up, Goat Cheese And ChivesSpoon the avocado onto toast and mash it with a fork. Top it with sliced radishes, goat cheese, chives, salt, and pepper. Step 4: Keep It Simple With Everything BagelThinly slice the avocado, then arrange it onto toasted bread. Sprinkle the top with everything bagel seasoning. Step 5: Up The Protein With An EggHeat oil in a large saute pan over medium. Add the eggs and cook for 3 to 5 minutes until the whites are completely set and the yolks are still slightly runny. Season with sea salt and pepper.

Choosing Avocados: No one wants mushy avocado or avocado that crunches, right? If you want to enjoy the avocado the day you buy it, pick one that yields a little bit when squeezed in your hand. If you want to enjoy it in a few days, the avocado should yield in your hand but still feel somewhat like a softball. Customize It: Avocados are incredibly mild in flavor, so you can top them with whatever sounds good! Some other mix-ins and toppings include cream cheese, cucumber, arugula, dill, parsley, microgreens, and other fresh herbs. Bread Choice: Toast is only as good as its bread! For the best results, use bread with a sturdy crust and tender crumb. If you have gluten sensitivities, use your favorite gluten-free bread.
