Here are the simple ingredients you need to make homemade pizza pockets:

Vegan Pepperoni: For this recipe I used The Very Good Butchers Very Good Pepperoni. Very Good Butchers has a premium line of  meat substitutes that has a meaty punch without the meat. This is a great substitute for even the meat eaters in your life. Their pepperoni is fantastic for sandwiches, pizza, snack boards, and of course, these homemade pizza pockets. It’s so flavorful, versatile, and can trick even the meat eaters into a meatless meal.

Pizza Dough: Use a simple store-bought dough or make your own. I have a recipe for pizza dough here.  Get Creative: You don’t just have to make simple pepperoni and cheese here, you can get creative with your fillings. Try loading it with some veggies and cheese, make a Hawaiian version with pineapple, make a Mexican-inspired pocket with beans, cheese, and sour cream. The options are endless here. 

How do you make homemade pizza pockets?

  1. Preheat oven to 350 farenheit and line a baking sheet with parchment paper, gently grease, and set aside.

  2. Generously flour a clean surface and rolling pin and roll our pizza dough into a thin large rectangle.  Using a pizza cutter or sharp knife cut the dough into at least 20 square pieces.

  3. Begin by adding a small dollop of pizza sauce, some cheese, then pepperoni. Repeat this step until each square has all their fillings.

  4. Using your fingers, fold two opposite corners together and pinch.  Repeat this step with the other two corners.  Gently pinch edges together and spin together to form a little ball. Repeat till you have 20 balls.

  5. Place each ball seam side down, gently brush with olive, dust with garlic powder/Italian seasoning.

  6. Bake for 15 minutes then broil for 1-2 minutes until golden.

  7. Serve with pizza sauce and parsley or cilantro

What else can I fill these with? Have fun with this concept, use any of The Very Good Butcher products with fresh veggies and cheese! Overfilling: Do not overstuff the balls, they will explode in the oven! Stick to around 1 tbsp. measurements + 1/2-1 piece of pepperoni Dough: I recommend using pre-made pizza dough, this recipe is truly so easy so no need to overcomplicate it. However, if you do want to make your own dough, go for it!  Can I freeze these? Absolutely. Make a bunch ahead and you’ll have some for a quick snack or appetizer. To freeze, place in a single layer in a freezer bag, and when you are ready to enjoy, remove them and thaw in the microwave. Yum!
