My husband has a charcoal grill and a thing called a Big Green Egg which both require a lot of fiddling…at least I assume they require fiddling because my husband is always poking and temperature taking and standing around the grills when he uses them. I do love the taste that a charcoal grill gives food, but life doesn’t give me all the time, so push button grilling is where I’m at. Long story short, we’re grill hoarders. Which brings me to today and this chicken. You know I love a good chicken recipe, and this is best grilled chicken, if I do say so myself. I love a citrus chicken. Like love. It’s my most favorite type of marinade and perfect for the warmer months. But I decided that wasn’t enough. Oh no it wasn’t. Let’s amp this whole situation up with Basil Butter…which you will want to slather on your whole life. Trust me. It’s all about real, minimal ingredients that pack a big punch in this Honey Citrus Grilled Chicken Recipe… I have had herbed butters on steaks a time or two and it’s flipping fantastic, but why should steak have all the fun? Why is the the best Grilled Chicken Recipe?
I buy citrus fruit all the time. We use it in SO many things around the house…guac, water, salad dressing, seafood… Mixing both lemons and limes in the marinade gives it a super bright flavor and cut with the honey it really makes for a sweet, but not overly sweet flavor. Mix up the marinade (it will only take a minute) and pour it over your chicken. Let it soak in all that goodness for at least 3 hours. In the meantime let’s get that Basil Butter going. This can be made way in advance which is fantastic. The Basil Butter that goes on top of this Honey Citrus grilled chicken recipe is super simple, just mix together fresh basil, salt, pepper, garlic powder and fresh basil. It really adds something extra special to the chicken! When you’re ready to eat, get that chicken on the grill! I grill for 5-6 minutes on each side of my boneless, skinless chicken breasts…but that will vary on the thickness of your chicken. When you’re done serve it up warm! Make sure you have your delicious Basil Butter ready… I make sure my butter is room temperature when serving, it will spread much easier! And smear a little bit on your warm honey citrus grilled chicken and watch it melt. The butter leaves a silky, rich finish to the chicken that is totally next level.
