This mint and pea soup recipe uses all standard ingredients. Everything can be found right at your grocery store, and most of the items are likely already lining your pantry and refrigerator shelves! As for the crème fraîche, that can typically be found with the gourmet cheeses.

Butter: First up is 2 tablespoons of unsalted butter. You can use salted if necessary, but I would omit the added salt later on if you go this route. Onion: 1 medium white onion is just enough for 4 servings of soup. Dice it up into small pieces before adding, and don’t be afraid to throw in a little extra if you’re in the mood for extra flavor and anti-inflammatory benefits. Garlic: Next, add flavor by using 2 cloves of minced garlic. Peas: Finally, the peas! You will need 4 cups of either fresh or frozen. Divide them for using in the amount of 3 cups and 1 cup – 1 part for blending, 1 part for leaving whole! Citrus, step aside, did you know peas are a good source of Vitamin C?! Mint: 1 cup of roughly chopped mint will add the perfect minty fresh flavor to the soup. Step 2: Soupify the dishAdd 3 cups of the peas, the mint, and 2 cups of the broth to the pot (reserve the remaining 1 cup of peas). Cover and let the pot gently simmer for 10 minutes. Step 3: Blend the ingredientsUsing a handheld immersion blender (or by carefully transferring to a countertop blender), blend the soup until smooth. If using a countertop blender, leave the lid ajar to allow the steam to escape. Step 4: Assemble the dishReturn the soup to the pot. Then, add the remaining 1 cup of peas and 2 cups of broth. Storage tips
