We’re big sweet potato fans around here. They are packed with vitamin A, add a bit of natural sweetness, and are incredibly versatile. They can be anything from sweet potato cookies to sweet potato fettuccine to this incredible pillowy sweet potato gnocchi. And I know what you’re thinking. “Homemade gnocchi must be so hard to make,” but I promise it’s actually pretty simple! All wrapped up in buttery herb sauce, these pasta pillows (I need to trademark that) will be on your dinner rotation.

In keeping with traditional gnocchi, this Sweet Potato Gnocchi recipe has just four main ingredients (jump to the recipe card for measurements):
Sweet Potatoes: We’ll microwave these for quick preparation (though this gnocchi is also killer with roasted sweet potato!) For a fun fall variation, try replacing 1 cup of sweet potato with pumpkin or butternut squash! Egg: You just need 1 egg to help bind all this pillowy deliciousness. Flour: The goal with gnocchi is to use as little flour as possible and to work the dough as little as possible. All-purpose flour or 1:1 gluten-free will work. Salt: A dash of salt elevates the flavors of the sweet potato and gives this gnocchi a more tender texture!

Be sure to jump to the recipe card for full printable instructions! Step 1: Cook Sweet PotatoMicrowave your sweet potatoes to quickly cook them. Step 2: Mash!Mash them up, using either a potato masher or a potato ricer. Let them cool, then mix in the egg. Step 3: Make The DoughStir in the flour, adding more only if needed (we really don’t want to add more). Step 4: Roll The Dough Roll it into long ropes about 1 inch thick. Then cut into gnocchi 1/2-inch pieces. Step 5: Shape (Optional)Gnocchi can be left as smooth pillows, or you can roll them over a fork to create that classic gnocchi shape. Step 6: BoilBoil the gnocchi until it floats to the top of the pot, about 2 or 3 minutes. Step 7: SauteI like to saute my gnocchi after boiling to give it crispy edges!
