If you’re in need of an easy salad that’s filling enough to have as a main dish, then look no further than tabbouleh (sometimes spelled tabouli)! This naturally vegan salad is an Eastern Mediterranean dish that includes cucumbers, tomatoes, bulgur, onions, parsley, and mint! If you’re unaware, bulgur is a grain that includes the whole wheat grain, cereal germ, bran, and endosperm. Bulgur wheat is cooked like rice and is incredibly hearty. Bulgur does contain gluten, but this salad is just as easy and delicious with quinoa if you need it to be gluten-free.
here’s what you’ll need
Bulgur: I know bulgur isn’t the most common ingredient, so definitely learn more about it through our bulgur 101 post. It’s typically found by the other dried grains in the store, like rice and quinoa. Veggies: This salad contains tomatoes and cucumbers. Tomatoes add sweetness and cucumbers add crunch. Feel free to add or swap other veggies, like bell peppers, for the cucumbers. Salad Greens: For the leafy parts, we’ll use parsley, green onions, and fresh mint leaves. I prefer to use flat-leaf parsley but a combination of flat and curly parsley will work too. Dressing: For the dressing, we’ll use olive oil, lemon juice, garlic, and a bit of salt.
Making tabbouleh is easy
It should only take 30 minutes to make from start to finish! When all is said and done, you’ll have 12 half-cup servings.

Avocado: Honestly, what salad isn’t delicious with avocado on top? This is definitely an option that’s sure to taste great. Glazed nuts: I love adding glazed walnuts or pecans to my salads. Cheese: Many types of cheese will work well as a topping for this salad, but blue cheese or feta cheese works the best!
