Ingredients

850 g Mixed Vegetables 1/2 teaspoon Kashmiri chilli powder 1/4 cup sour Thick Curd  1/2 teaspoon turmeric powder Required Salt  1 teaspoon + 1 tablespoon  Coconut oil  Curry leaves  Green chilli To grind 3/4 cup Coconut  3 Green Chilli  5 small onion 1/2 teaspoon cumin seeds

How to prepare Kerala aviyal with step-by-step pictures 

First, add mixed vegetables, turmeric powder, chilli powder, salt, and coconut oil; mix well

Add ingredients under “to grind” into a mixie jar; pulse 

Boil water in a wide pan with curry leaves and  green chilli and when the water boils, add drumstick and mixed vegetables

Cover and cook till veggies are fork-tender

Add ground coconut; Mix well and simmer for 2 minutes

Whisk the curd and add

Cook for 2 minutes on low flame Finally, add coconut oil and curry leaves; cook for 30 seconds; cover and keep till you serve
