Cabbage- The fiber-rich Cabbage adds crunchiness to this healthy salad. I have used the local produce of Green cabbage. Feel free to use any cabbage that is local to your area or liked by you. We here in India, make sure to clean cabbage carefully. I peel off the layers with my hand first and keep them soaked in warm salty water to remove any worms or dirt.  Cherry Tomato- The small and cute cherry tomatoes are this salad’s heart. Though you may use any juicy tomatoes, cherry tomatoes make the salad look vibrant. Red Onion- Red onions work best. The white or pink onion works well. You may use shallots or spring onions too.  Cucumber- The cucumber adds fiber and a mild sweet flavor depending upon the variety used. I have used the local ones in India. You may use English cucumbers as well as it has less or no seeds. Guava- Rich in Vitamin C, guava adds a sweet and pleasant taste to this salad. You may swap it with any other fruit as well.  Bell pepper- Bell peppers add strong, bold, and peppery flavor. It balances the sweetness added by other ingredients. You may use green bell pepper or zucchini. Feta Cheese- Feta cheese adds a tangy and salty flavor to this Greek salad. It has high protein and low in fat. Make sure to add no or less salt over the salad, as feta cheese already has salt. You won’t appreciate the too-salty flavor. you may use any cheese like goat cheese. Raw Mango-This is another variation to this salad. Adding fresh raw mango makes this salad refreshing with a hint of tart. You may swap it with fresh lemon juice. Green Chilly- Adding heat to salad is a unique thing and coming from India, my taste buds are well attuned to chilly. Feel free to reduce or skip it. Maple Syrup Maple syrup balances the savory, spicy, and tangy flavors. You may add honey too. If you like savory flavors, add Dijon mustard.

Detailed Recipe of Keto Greek Salad

Step 1 Chop Veggies

Chop the veggies and guava in any shape you wish. They can be diced in small pieces or large chunks depending upon how you like them. In a large bowl, place cabbage large pieces on the walls of the bowl.

Add all the chopped veggies. Top it with feta cheese, and grated raw mango, and add black pepper, green chilies, red chili flakes, lemon juice, and maple syrup, and give them a good toss. Garnish with winter greens like coriander leaves or basil.

Expert Tips

Use of freshly chopped vegetables and fruits is highly recommended. That ensures the freshness of the salad.  I avoid any leftovers. If you still have any, add them to an airtight container with a lid and refrigerate for about 2 days. Since the salad has maple syrup and tomatoes, there is a high chance that it may be runny if stored for long and have no crunchy texture thereafter.

Storing Suggestions

The salad shall be ideally consumed fresh as leftover salad may be too runny or not crunchy. For leftovers, you may keep them in a dry container with a lid in the refrigerator for about a day.  To make it ahead of time, chop everything and store them in separate containers with a lid. Assemble and garnish just before serving.

Variations

Add another ingredient- Add Kalamata Olives, or black olives, fresh oregano for the classic touch. While this salad doesn’t use any oil, feel free to add extra virgin olive oil. Add another green- You may garnish the salad with fresh herbs like cilantro or parsley or add romaine lettuce in place of cabbage. Add another Protein- Add beans or chickpeas to add more protein to this salad.
