I called this a Spring Radish Salad because for a hot second it felt like spring. But now it’s snowing and I’m bundled in my warmest sweater dreading shoveling snow off the sidewalk. I’m wondering why I ever thought it was time to say the word “spring!” Maybe we can call it the “Bathing Suit Season Is Coming Radish Salad,” with its 34 calories per serving. Or the “I Guess I’ll Eat The Rest Of This Plain Yogurt Radish Salad,” with its use of plain yogurt as an easy, no-make (because you don’t have to make it) dressing. No matter what you choose to call your rendition of cucumber radish salad, one thing is for certain: it’s going to taste delicious. The mix of cucumber and radish is uber refreshing, and the yogurt and chives add so much flavor that borders on tangy and sweet. This He Who Shall Not Have A Proper Name Radish Salad was first created during an infamous Hot Mess, a day in which two food bloggers descend upon a kitchen and make a royally Hot (albeit tasty) Mess. The recipe was the brainchild of my other Hot Mess half, who is Dutch and therefore uses a fraction of the calories/salt/fat that we Americans are accustomed to. The result? A delightfully light and flavorful salad with a simple ingredients list and even simpler preparation.

Ingredients in this Spring Radish Recipe

There’s nothing better than a recipe that packs in flavor with minimal ingredients. The fewer items that make their way onto the list, the better! This radish salad keeps things simple using only 5 ingredients, most of which are likely already in your fridge.

Radishes: Start with 10 radishes. That’s about 1 bunch. Did you know radishes are a great source of antioxidants? Cucumber: Next, you’ll need a cucumber, but not just any cucumber — an English cucumber. The English variety tends to be crunchier, which is a must in this salad (plus, it has few to no seeds!) Chives: ½ cup of chopped chives is going to add a nice onion-y flavor to the dish. (What even are chives? Answers here.) Yogurt: For the dressing, use ½ cup of plain yogurt! The creaminess of the yogurt makes the perfect sauce and eliminates the need for additional ingredients. Salt: Last but not least, spring radish salad is made complete with the addition of ½ teaspoon of salt. It’s the perfect amount for rounding out the flavors.
