Choose right mangoes
Always use a well ripe sweet mangoes . Make sure mangoes are without fibre. Slit top portion and keep aside to cover and freeze
Sugar for kulfi
I used condensed milk. It gives good consistency and sweetness to the kulfi. If your mango is sour add extra sugar.if you are replacing condensed milk with sugar add milk powder and milk for the texture.
Shelf life the kulfi
Stays good for a month. If you defrost costume within few minutes else kulfi might melt. Cling wrap the remaining and freeze again

Mango kulfi
1/2 cup Sweetened Condensed milk 1 tablespoon heavy cream 1/2 cup Mango pulp Generous pinch Cardamom powder Pinch of saffron
How to make Mango stuffed kulfi with step by step pictures
Wash mango well and dry Use a sharp knife to extract the pulp and deseed
Add mango pulp, Condensed Milk , heavy cream, cardamom powder and saffron; grind well
Keep the mango skin in a glass Fill the mango kulfi,. Cover and Freeze for about 8 hours
