Butternut Squash: Of course, we need this! I’m looking for one that’s medium in size. The large base should be between baseball and softball size. Butter: A little fat adds great flavor. Olive oil will work, too. Herb Variation: For this flavor, you’ll need garlic, thyme, or rosemary, and black pepper. Sweet Variation: I love this one with brown sugar or maple syrup and a pinch of cayenne pepper for a little warmth. Cinnamon will work, too.

Making mashed squash couldn’t be simpler. We’ll start by prepping the squash; then, we’ll add our flavorings to make it the perfect Thanksgiving side dish! Step 1: Prep the ButternutFirst, preheat the oven to 400°F (204°C). Cut the top and bottom off of the butternut, and then carefully cut it in half lengthwise (the skin can stay on). Next, use a spoon to scoop out the seeds. Drizzle the orange part with either 2 Tbsp of oil or rub with 2 Tbsp of butter. Step 2: Add the FlavorIf you want to add a flavor, rub on the ingredients of your chosen flavor option (see below). Step 3: Roast Until Fork-tenderPlace the butternut cut side-down on a baking sheet, roasting for about 45 minutes, or until fork-tender. Placing it facedown will help steam the inside, cooking it faster. Step 4: Mash It UpAllow the butternut to cool slightly, then scoop out the orange flesh and place it in a large mixing bowl. Add the remaining 2 Tbsp of oil or butter and mash to your desired consistency.
