Herbs: I used fresh oregano and mint for this recipe, but you can experiment with different fresh herbs you have on hand or are trying to use up. Avocado: Avocadoes are a healthy fat that are not only filling, but also have a lot of benefits. They are a great source of potassium, fiber, folate, and not to mention they’re so good and creamy.
How to make Mediterranean quinoa salad:
Storage: This salad will last up to 5 days in a tightly sealed container in the fridge. Avocado: Be sure to only add the avocado when serving/eating. If you’re doing meal prep style then add just before you eat it. Additions: You can add ingredients like olives, capers, bell peppers, or cucumber too! Have fun with this salad.
