When you’re craving a hearty, satisfying, and filling meal, sweet potatoes are here to save the day! With their crispy, caramelized skins and soft, tender centers, these healthy root veggies are always a great option. Today, we’re cooking ’em up stuffed sweet potato style. We’ll fill them with a vibrant roasted chickpea and tomato blend before topping them with a homemade sauce made from hummus, lemon juice, dill, and garlic (this is one of my favorite ways to eat hummus)! Mediterranean stuffed sweet potatoes are a seriously well-rounded dish that’s as good for your body as it is for your taste buds. Here’s What You’ll Need

To make this stuffed sweet potato recipe, we’ll use a selection of ingredients chosen for their flavor and their benefits!

Sweet Potatoes: You’ll need 2 medium sweet potatoes. Sweet potatoes have loads of benefits, like Vitamin A and complex carbs (aka energy!). Olive Oil: 2 tablespoons of olive oil helps the potatoes and chickpeas bake. It also contains antioxidants that help your body fight free radicals! Chickpeas: 1 15-oz can of drained and dried chickpeas will serve as the bulk of the filling. Chickpeas are a great plant-based protein source—just 1 cup contains over 14 grams! Seasonings: To add flavor, use ½ teaspoon each of cumin, cinnamon, smoked paprika, and garlic powder, along with ¼ teaspoon of salt. Tomato: You’ll need ¼ cup of finely diced tomato. Use Roma, beefsteak, cherry, grape, or any type of tomato you have. Tomatoes are another great antioxidant source, providing lots of lycopene and Vitamin C! Parsley: Finish off the potatoes with ¼ cup of chopped parsley. This herb is often overlooked as a nutrient source but is full of Vitamins A and K! Sauce: For the sauce, we’ll use ½ cup of hummus, 1 tablespoon of lemon juice (another source of Vitamin C!), 1 teaspoon of dried dill, 1 garlic clove, and some water to thin it out.

Choose the Right Sweet Potatoes: Opt for medium-sized sweet potatoes that are relatively uniform in size. This helps them cook evenly and makes them perfect for stuffing! Roast Face Down: Place the sweet potatoes cut-side down on the baking sheet to get nicely caramelized edges. Get Creative With Toppings: Switch up the flavors of these Mediterranean stuffed sweet potatoes! Add crumbled feta cheese, tzatziki sauce, toasted pine nuts, olives, or a sprinkle of za’atar for an extra layer of flavor and texture.
