These Pineapple Cookies sound a little tropical, right? So they are and they aren’t. Here’s the deal… They have all the makings of a Pina Colada-ish flavor…pineapple, coconut…but they completely aren’t tropical. Does that even make any sense? The pineapple flavor is a subtle sweetness and the toasted coconut adds texture. I’m normally not a cakey-cookie lover, but these little gems have changed my mind. They get lightly golden and crisp at the edges, but stay fluffy on the inside.
I can’t quit the toasted coconut lately.
And you mix crushed pineapple right into the cookie dough!
