I’ve broken the ingredients for this cauliflower soup recipe into two parts: the soup and the chickpea topping. The topping can be optional but highly encouraged! The Soup: To make this, cauliflower, white onion, cashews, vegetable broth, and salt go into a crock pot. The Topping: Now for what takes this soup over the top! You’ll roast chickpeas in olive oil, paprika, cumin, and salt for basically popable seasoned fries, but chickpeas.

Blend: Once the ingredients are done cooking, use an immersion blender to puree it carefully. Alternatively, transfer it to a blender and carefully blend it with the top vented to let hot air escape. Be sure to taste and adjust with salt and pepper as needed. Make the chickpeas: Toss the chickpeas in oil and seasoning and then roast till crispy.
