The boys had a pre-Christmas sleepover at Ben’s parent’s house last weekend so Sis and I had the run of the house. After putting her to bed I went a little wild… By a “little wild” I mean I bought the Little Women double feature – Winona Ryder + Emma Watson versions – then watched them BOTH…in the same night! Yeeep, Mama’s still got it! Popcorn’s my usual go-to for movie watching but with it being the holiday season and all, I traded my popcorn for gluten free, Small Batch Chex Mix. ‘Tis the season!
Ben and I both grew up in families that were constantly churning out big batches of Chex Mix during the holiday season, and it’s something we both look forward to doing in our own home every year. Crunchy, salty, and totally addicting. Too addicting! Anytime we make a batch we complain to each other the entire time about how we can’t stop eating it. Problem solved with this small batch recipe that makes just enough for two (or one!)
Small Batch Recipe Notes
How to Make Small Batch Chex Mix
Start by combining equal parts Rice and Corn Chex in a microwave-safe bowl with gluten free O’s cereal and peanuts (I use Planter’s UNSALTED Dry Roasted Peanuts, which are gluten free).
In another bowl, combine melted butter with gluten free worcestershire sauce (at the time of this writing, 12/20, Lea & Perrins in the United States is gluten free,) homemade seasoned salt, garlic powder, and onion powder. Pour over the dry ingredients then use a spatula to fold the ingredients until evenly coated.
Microwave the Chex Mix in 45 second increments, 3 times, stirring very well in between increments. Lastly, stir in gluten free pretzels then spread the Chex Mix out onto a sheet of wax paper or parchment paper to cool completely. That’s all she wrote!
