I’ll admit I used to think of them as food only my parents eat, not something a cool kid like me would eat…little did I know, you become your parents and radishes are now a regular on my weekly grocery list. After the smashing success of my viral smashed Brussels sprouts and ranch smashed baby carrots, radishes are up next. Because of their high water content, radishes can be tough to get crispy. But through some science, I’m going to show you how to get these smashed radishes browned and filled with flavor.

Radishes: Grab 2 big beautiful bunches of radishes! The farmers market is a great place to get them, otherwise, you can get pre-washed and cut ones from the grocery store. Seasoning: Keeping it simple, you’ll just need lemon pepper seasoning (you can make your own or buy store-bought), salt, and olive oil. Olive oil helps to get the edges crispy and lends a bit of flavor. Avocado oil will work too. Cheese: Parmesan cheese helps to add a little more saltiness and makes these low-carb bites taste far from low-carb!

Like I mentioned, radishes have a high water content, so they don’t get completely crispy. But there are some things this recipe does to encourage the maximum browning and flavor!
Leaving the pan un-lined helps to promote better browning since the heat is directly transferred. Season the radishes first so the oil and spice get all over the radishes. Space out the radishes on the pan. This gives the hot air room to circulate on all sides.
