Sushi Has Never Been Easier
Is the fishy flavor of seaweed not your thing? I hear you. Or maybe you’re tired of fumbling around while attempting to roll your own sushi at home. Don’t worry—I’ve found a way to eliminate this pesky ingredient altogether: stuffed cucumber sushi rolls! They’re healthy, refreshing, and (the best part) so easy to make. Seriously, let’s leave the rolling to the pros. The concept is simple: scoop the innards out of your cucumber, stuff it tightly with your favorite sushi fillings, and slice! See what I mean? Easy peasy.
Here’s What You’ll Need
You just need a few ingredients to make stuffed cucumber sushi rolls at home.
Anyone Can Make This sushi
Gentle persistence is the key here. Gently compress, add more, and compress until the cucumber is packed with delicious sushi fillings! Step 1: Cook The RiceCook your rice according to the package. Once finished, do not stir the rice but allow it to cool for a stickier texture that will hold everything together. You can season it with rice vinegar, sugar, and salt (for every 1 cup of uncooked rice, use 2 tablespoons of rice vinegar, 1 tsp of sugar, and 1 teaspoon of salt). Step 2: Scoop The CucumbersCut each cucumber in half and remove the seeds. We won’t use the scooped-out bits in this recipe, but they can be added to this easy tzatziki sauce! Step 3: Stuff The CucumbersStuff the hollowed-out cucumber tubes with a small amount of rice, avocado, and your favorite veggies. Step 4: SliceWith a sharp knife, slice the cucumber into ½-inch thick pieces. If you notice the filling is loose as you cut, stuff more rice and peppers where needed. Step 5: ServeServe these stuffed cucumber sushi rolls with your favorite sushi condiments, like spicy mayo dipping sauce, soy sauce, pickled ginger, and wasabi.
Fill These With…
These stuffed cucumber sushi rolls are packed with fresh, vibrant fillings, but you can also add:
Sautéed Portobello Mushrooms: These babies will have you doing a double take on the vegetarianness of your sushi rolls. Crispy Tofu: The crunch of cucumber and tofu is a match made in heaven. Probiotic-Packed Kimchi: Vegetarian sushi deserves vegetarian kimchi (no fish sauce here!).
