Nothing screams summer like picking more strawberries than you know what to do with (and proceeding to work them into every recipe you can think of, like strawberry limeades or frozen yogurt covered strawberries!). We’ve already perfected creamy strawberry popsicles, but being the good little nutritionist I am (and a total popsicle nerd), I wanted to create a low-sugar ice pop. Enter these sugar-free strawberry popsicles! The natural strawberry sugars and monk fruit are enough to make a tasty treat (while keeping the sugar content way lower than most other popsicles). I mean, who needs sugar when you’ve got fresh fruit doing the heavy lifting? Plus, with just 3 ingredients, they’re ridiculously easy to whip up!
Here’s What You’ll Need
You only need 3 simple ingredients to make these vegan, sugar-free strawberry popsicles! (I know, it’s crazy, right?)
Strawberries: Start with 2 heaping cups of strawberries, cut into quarters to help with measuring. You can use fresh or frozen berries (just be sure to thaw them before blending if using frozen ones). Monk Fruit Sweetener: Next, include 2 to 4 tablespoons of monk fruit sweetener. You can usually find this in the grocery aisle with sugar and other artificial or low-calorie sweeteners. Lemon Juice: Finally, 2 tablespoons of freshly squeezed lemon juice adds a bit of zing for a strawberry lemonade kind of vibe. Plus, the acidity keeps the color bright! (Lime juice also works well here.)

Customize The Flavor!
More of a blueberry or a mango popsicle lover? Here are some easy ways to remix these sugar-free popsicles into the flavor variation of your dreams.
Dark Berry: For a tasty blackberry or blueberry popsicle rendition, swap the strawberries for 2 cups of either berry (fresh or frozen). Mango: The same thing goes for mango, except this time, you’ll also want to add a bit of water to your mix. Start with ½ cup and add more until you have a smooth, thick consistency. Raspberry: For raspberry popsicles, use 2 cups of raspberries. Skip the lemon juice, and add about ¼ to ½ cup of water.
