Tiffin preparation
If you are going to use frozen coconut, thaw them
TO CHOP
Potato for Khichdi Coriander leaves for khichdi and raita
TO SOAK
Firstly soak Sabudana well and soak for 6 hours or till they turn soft press for Khichdi
To cook
Microwave potatoes with enough water and salt till they turn fork tender for Khichdi
To grind
Coarse pulse peanuts

Sabudana Khichdi
Drain water from sabudana and potatoes well Add green Chilli, curry leaves, and cumin seeds to hot oil; let them splutter Furthermore, add potatoes and a little salt and cook for 5 minutes or till the potatoes starts turning slightly brown Lower the flame and add sabudana, salt, sugar, and peanut; mix gently Turn down the flame to the lowest setting and cover the lid and cook for 5 minutes Avoid sauteeing frequently Turn off the stove and sprinkle coconut and coriander leaves, give a good mix Squeeze lemon juice before serving

Boondi raita
Whisk the curd with little water Add salt, chilli powder, cumin powder, chat masala, and mix Finally, mix boondi and serve
