Over the last few years I have become a little obsessed with nuts. It’s a little weird. I don’t know what happens once you turn 30…it’s like suddenly you become an old person and a bowl of mixed nuts morph into an obvious snack option.

I guess since Flaming Cheetos also still taste delicious to me, I’m ok. But I’m finding it’s a slow progression…one day you’re busy eating Twizzlers and Funyons and then you blink and you’re drinking Metamucil before bed and snacking on a bowl of nuts. For the moment I’m somewhere in between. But let me explain the back-story to these little gems…I was watching a show on Food Network called The Best Thing I Ever Ate…and the episode revolved solely around snack food. WELLLLLLL Giada came on and talked about how she basically wanted to marry the warm bar nuts at Union Square Cafe in NYC. It seemed like a simple enough thing, but dang, girlfriend was obsessing over them. Which meant I had to obsess over them too. A simple google search pulled up a “copycat” recipe. Best decision ever.

I’ve made multiple batches of these in the last few weeks. I am telling you, they are simple beyond belief…they take you 10 minutes…and they are RIDICULOUS! If you are having company, whip up a batch of these and put them out on the table while they’re still warm. Don’t say anything, just place the bowl in front of your guests. Within a matter of minutes you will be answering questions about the recipe. Trust me.

How to Make This Easy Nuts Snack

All you have here is chopped fresh rosemary. Yes you MUST use fresh. Place that in a bowl with dark brown sugar, kosher salt, butter and cayenne. Grab your favorite mix of nuts. Make sure they are raw and unsalted. Toast your nuts for just 10 minutes… And then pour the warm nuts on top of the seasonings… Just stir and serve! That’s literally it. I like to place a sprig of fresh rosemary in the bowl when I’m serving to fancy it up. Seriously you guys have to make these. EAT THEM WARM!
