Your New Summer Sipper

It’s no secret that we’re all about smoothies around here. I mean, seriously, how could you not love a “food group” (yes, I said food group) that sneaks in superfoods while still being ridiculously tasty and easy to make? And I know I’m committing a culinary sin by saying this, but I’m not the biggest fan of eating watermelon on its own. I know, I know. I blame it on a childhood melon allergy (which is now gone, but the trauma remains). But I’ve finally found a way that I actually really enjoy watermelon—smoothie form! It pairs so well with other cool, summery ingredients, like mint and cucumbers. So today, we’re blending up this refreshingly delish watermelon smoothie that’ll make you a believer too!

You Only Need 3 Ingredients

Watermelon: We’ll start with 2 cups of frozen seedless watermelon. Just be sure to chop and freeze the cubes beforehand. (This is how we get that icy, sorbet-like consistency without ice!) Cucumber: You can peel or not peel the cucumber—the world is your oyster. (Leaving the peel on makes the smoothie more brown but provides extra fiber and nutrients – oh, the conundrum!) Mint: Mint makes this watermelon smoothie that much more refreshing (even more so than just the raw hydration of watermelon!). A few sprigs of fresh mint leaves go a long way! Optional: Water and honey can be added as needed here. You may need water to get your blender going. And while watermelon is very sweet, a touch of honey can help amplify the sweetness.

This Smoothie Is Super Easy To Make

You only need a blender and about 5 minutes. Check it out for yourself! Step 1: Blend The SmoothieAdd frozen watermelon chunks, cucumber, and mint to a blender. Blend until smooth, adding water as needed to get the blade moving. Yup, that’s it!

For The Best Smoothie…

Don’t Blend Too Long: Watermelon has a high water content, so stop your blender as soon as the mixture is smooth to prevent a watery texture. Balance The Sweetness: If your watermelon is extra sweet, a squeeze of lime juice can work wonders to add tartness and brighten up the flavors. Add More Frozen Fruits: Feel free to toss in some frozen strawberries, mango, banana, or pineapple for extra fruity flavors and antioxidants! Coconut Water Twist: Swap plain water for some coconut water to up the hydration and add a subtle tropical vibe. Meal Prep It: Chop and freeze all the ingredients in a baggie for a meal-prepped version of this watermelon smoothie. When ready to enjoy, empty the frozen ingredients into your blender, add water, and blend!
