Everyone wrestles with food waste. It’s always staring you down from the counter, begging for a second life. Well, this smoothie is here to do that! In case you didn’t know, the whole watermelon is edible: flesh, juice, and rind! The resulting smoothie left me wondering why we don’t use watermelon rind more often. This smoothie will help you reduce food waste, is delicious, ready in 5 minutes, and just requires a strong blender!
You just need 4 ingredients
Watermelon: For this smoothie, we need both the watermelon rind and the flesh. No need to seperate them if they aren’t already. Strawberries: I like to add a little extra natural sweetness with the help of frozen strawberries. Honey: This is another way to add sweetness. Feel free to adjust the amount based on your own taste preferences. Lemon Juice: To balance the smoothie out, you just need a splash of lemon juice to brighten it up.
Here’s how to make it
Can you eat watermelon rind?
Many people do actually use the rind of the watermelon. You can pickle it or chop it up and cook it like a vegetable in stir fry! And while you are reducing food waste, saving money, and utilizing every ounce of sunshine and growing power that went into that watermelon, the rind also contains a number of nutrients plus loads of fiber not found in the flesh of the watermelon fruit.
