When creating this recipe, I wanted it to be savory, creamy, and with pops of citrus, similar to a whipped feta dip situation. And the way to do this? Silken tofu. Silken tofu has a super smooth, custard-like texture making it perfect for dips. Unlike firmer tofus that are better for things like tofu waffles (yes, we went there).
Why you’ll love it
Easy to make since you don’t need to press the tou or wait for it to come to room temperature. It all just gets blended together! Higher in protein and vegan thanks to soy-based tofu and nutritional yeast which lends the savory flavor. It’s so versatile and can be used as a dip in a gorgeous fresh vegetable spread or schmeared on your favorite sandwich or veggie wrap.
Ingredients for Silken Whipped Tofu
Making this tofu dip requires very few ingredients. Really, just the silken tofu, some spices, and citrus. Here’s what you’ll need:
Silken Tofu: The secret to a super creamy dip! No need to press it or let it come to room temperature, just drain the water and use it. Oil & Spices: To flavor the dip you’ll need nutritional yeast, salt, and pepper. And to help emulsify it, a little bit of olive oil is needed. Citrus: To add that punch of citrus flavor, this dip uses the zest from a whole lemon (none of the juice though, which would make the whipped tofu too tart)!
How to make Whipped Tofu
To make this spread, there are just two main steps:
recipe testing
In testing this recipe, I tried it a few different ways! But, in the end here’s what worked.
Using just the zest: I tried this recipe using lemon juice, but it turned out too acidic and just about split the sauce. By using just the zest, you’re able to bring all the citrus flavor without overpowering it with sourness. Use the tofu as is: I thought initially that the tofu would need to be at room temperature to blend properly, but I was wrong! Because silken tofu is so soft already it made no difference what its temperature was. This would only matter if you were making a sweet version with melted chocolate or something that will seize up when cold.
Way to enjoy this tofu spread
This dip can be used in pretty much anyways a cheese spread or hummus would be used.
An Avocado Sandwich is that much better with a little whipped tofu spread. Chard Wraps will hit the next level with this dip added to them. Confit Tomatoes can be added on top for a leveled-up toast situation (pictured above). Truffle Fries dipped in this lemony whipped tofu is a match made in heaven! On Chickpea Toast in place of the whipped goat cheese!
